Good All Round Kitchen Knife

I have had the 8" Wusthof Gourmet for probably a decade. While I have a few Japanese kitchen knives that my wife and I use regularly in the kitchen, I still prefer my Wustof for many tasks.
It is easy to sharpen, and even easier to keep sharp. I do not know the steel, and I wish I did, but it has very good edge retention. I just hone it 10 times or so after each use on my ceramic rod, and it stays sharp. A steel honing rod will work too. Every 8-9 months I will sharpen it, and I finish with a high grit (16,000). However, a 3000 grit will work fine or even a 1000 grit.
It is a good all around kitchen knife. If you had to have just one kitchen knife, this is a good one to have: fair price, low maintenance (just hone), corrosion free, good slicer and fair chopper. I do not recommend the steak knives at all. The tips break, and they just do not get that sharp.
