The Miyabi Birchwood 9" Chef's Knife is a large chef's knife built for large amounts of food. The blade is long, but is very well balanced. It is hand made in Seki, Japan, and has perfect fit-and-finish. The blade has a Damascus shell with a premium SG2 core, ice hardened to a perfect 63 HRC. This knife will exhibit great edge retention and wear resistance, and will be the focal point of your kitchen.
The Birchwood line from Miyai is recognizable by the Damascus blades with SG2 cores and the raw birchwood handles. Please note: raw wood handles can absorb water and other liquids, causing damage to the knife. Take care to properly dry the knife after each cleaning.
