The Gyuto is a new design from Mattia Borrani. It's a conglomeration of the best aspects of several different knives. The tip has a santoku-like drop, the edge is very gently curved, and the blade stock tapers in width much like a traditional German chef's knife. The handle is made of carbon fiber, burl, and black paper micarta. This is an excellent knife for any kitchen or chef.
