Features:So, I had been waiting for these for months, and finally noticed they were back in stock and jumped at the chance to buy them. I do the majority of the cooking in my house and decided I wanted to upgrade to a nice set of kitchen knives but also have them double as knives we could bring camping. They come shaving sharp out of the box and make quick work of meat and vegetables! Be aware they are a little thicker stock than traditional kitchen knives and some produce tends to stick to the stonewashed finish, but those are small prices to pay for the gains in food prep time.
I have a set of global knives made from VG-10 and I have TOPS Frog Market special duo made from 1095. I have also handled J.A. Henckels. This set is my current favorite. The handles are soft and the contouring lends to great hand position and control over the blades. The knifes feel incredible in hand. They are not heavy and the edges came hair splitting sharp. I have only used them for a about 2 weeks so I can not comment too much on edge retention but so far I have no qualms. I am sincerely grateful to be able to own these knives.
